Ingredients:

- Four boneless, skinless chicken breasts - Eight bacon slices - Salt and pepper to taste - Olive oil for cooking
- 2 ready avocados, stripped, pitted, and diced
- 1 cup cherry tomatoes, split
- 1/2 red onion, daintily cut
- 1/4 cup new cilantro, hacked
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions:
1. Set the oven temperature to 375°F (190°C).
2. Using toothpicks, secure the ends of each chicken breast as you wrap it in two bacon slices. Salt and pepper the chicken breasts wrapped in bacon.
3. In an oven-safe skillet, heat olive oil to a drizzle over medium-high heat. Add the chicken breasts to the hot skillet and sear for approximately 2 minutes per side, or until the bacon is lightly browned.
